Shiroe and Nyanta reach a conclusion that the recipe must've originated from the beta test phase of Elder Tale. Monster names change over time and it turns out they need a dropped item from an extremely high leveled one: a Roc. Seeing Scott's determination, Nyanta decides to become his teacher. They are able to retrieve the Roc egg and Nyanta teaches Scott in Real Food Preparation, the overskill Nyanta himself created that sparked a flavor revolution in the world. Two weeks later, Scott's rendition of the recipe impresses the father and soon enough, Scott gets married to the girl he loves.
Later on, Nyanta has his fellow Log Horizon guild-mates taste test rice balls he was helping a food crafting guild with. One of them comments about if they mixed dried bonito flakes into the rice, it'd be like cat food or "nekomanma". Shiroe brings up that the previous guild Nyanta was in was called Nekomanma. Ask anyone about their first impression of Nyanta and chances are the reply would be a "cool cat" literally. Nyanta presents himself as a gentleman of the highest degree from his appearance to his manner of speaking. When the Catastrophe occurred, the players took in some of their in-game character's appearances. In Nyanta's case, his race was Werecat and so this became his physical body when the canon begins.
The reason as to why he picked this particular race aren't stated in canon directly. Quite possibly it's because he wanted to separate his Elder Tale alter ego from something that could be found in reality. The person behind Nyanta was originally a roleplayer. In his twenty-something years of playing this MMO RPG, the player behind Nyanta developed this particular persona. It's only hinted that he had suffered some sort of great pain back home but it does result in Nyanta never speaking about his past before the Calamity. Nyanta rescued Serara, a low-leveled healer, from the player-killing guild who ruled the city. Demikas, the guild master, labeled her as his pet and took every chance he could to bully her.

Because of this act of kindness, Serara developed a crush over him and strives to help him out when she can. When help does arrive, Nyanta is more than happy to leave the gloomy city of Susukino but not before teaching the leader a lesson.
He completely trusts his friends to have his back even when the enemy starts to fight dirty. In normal circumstances a tank-based Monk would've had an advantage versus a lighting bruiser like a Swashbuckler. This was not case in the Nyanta vs Demikas fight. Demikas's strategy was just to simply spam his special abilities. Nyanta used his job's abilities to out run his opponent while chipping away at him with debuffs and chaining combinations. The synergy between Nyanta and Shiroe is enough to impress the other high-leveled Adventurer on the rescue team. The duo synced Shiroe's binding spells with Nyanta's quick physical attacks to reduce the enemy's health to 1 point before Demikas even realized what was going on.

DTP was known to take on the toughest raids and dungeons the game possessed but often had tendency to be. Nyanta is understanding of his bitterness since none of them ever asked to be brought into a world where they had no control. Nyanta is sadden that he cannot reason with Londark but it turned quickly to anger when the Lander Mizufa kills the mage all while commenting how nice is it for Adventurers to not be able to actually die. While having a reviving system has perks, dying is not something to be trivialized in Nyanta's mind. Mizufa even comments his blades lack the urge to kill when they engage in combat. His goal however wasn't so much to kill her but to just stop her from winning the bigger plan at hand.
Though he has seen his fair share of guilds and groups dissolve, Nyanta views them as a necessity. There is a reason why Nyanta never joined a guild after both Nekomanma and DTP disbanded. He wanted Shiroe, who previously had a negative view on guilds, to understand the true power of guilds and form his own. Post-Catastrophe, Shiroe realized his plans to bring order to Akihabara weren't something he could tackle alone and so Log Horizon was born. Despite the loss of Nekomanma and DTP, Nyanta is not bitter about it. He came to terms that it's just how things turn out and he'll have fond memories of both while they gave him the foundation to be the veteran team dad figure he becomes.
